The dissertation deals with the development of analytical methods for the determination of selected biologically active compounds in three different matrices. The phenolic profile in Italian extra virgin oils and the amino acid profile in Czech mead were elucidated by liquid chromatography. The last type of samples were energy drinks, in which the amount of disputable â-amino acid taurine was monitored. The obtained results can be used for evaluation of the quality and authenticity of the products.
